Manakish is a popular Middle Eastern flatbread, typically topped with za'atar (a spice mix) and olive oil. It’s commonly enjoyed for breakfast or as a snack. Here’s a simple recipe to make Manakish:


Ingredients:

For the dough:

  • - 2 1/4 cups all-purpose flour
  • - 1 tsp sugar
  • - 1 packet (2 1/4 tsp) active dry yeast
  • - 3/4 cup warm water (about 110°F/43°C)
  • - 2 tbsp olive oil
  • - 1 tsp salt

For the topping:

  • - 3 tbsp za'atar spice mix
  • - 3 tbsp olive oil

Instructions:

1. *Prepare the Dough:*- In a bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes, or until it becomes frothy.- In a separate large bowl, mix the flour and salt. - Make a well in the center of the flour mixture and pour in the yeast mixture and olive oil. Mix until the dough begins to come together. - Knead the dough for about 5-7 minutes on a floured surface, until it becomes smooth and elastic. - Place the dough in a lightly oiled bowl and cover it with a damp cloth or plastic wrap. Let it rise in a warm place for 1-1.5 hours or until it doubles in size.


2. *Prepare the Topping:* - In a small bowl, combine the za'atar spice mix and olive oil. Stir well until the mixture forms a paste.


3. *Shape the Manakish:*- Preheat your oven to 475°F (245°C) and place a baking sheet or pizza stone inside to heat up.- Punch down the dough and divide it into 4 equal portions. Roll each portion into a ball and then roll it out into a thin circle, about 1/4 inch thick. - Place each rolled-out dough circle onto a parchment-lined baking sheet (or directly onto the preheated pizza stone if you have one).

   

4. *Add the Topping:*- Spread the za'atar mixture evenly over each circle of dough, leaving a small border around the edges.


 5. *Bake:*- Bake the manakish in the preheated oven for about 10-12 minutes or until the edges are golden and the dough is cooked through. - Remove from the oven and allow it to cool slightly before serving.
