 Khameer, also spelled as Khamir, is a traditional flatbread from the United Arab Emirates, known for its soft, slightly sweet flavor and aromatic spices. Here's a recipe to make this delightful bread at home

Ingredients:

  • - 2 cups of all-purpose flour (you can substitute some whole wheat flour for a more rustic texture)

  • - 1/2 teaspoon salt
  • - 1 tablespoon sugar
  • - 2 teaspoons active dry yeast
  • - 1 tablespoon vegetable oil (or melted butter)
  • - 3/4 cup warm water (more if needed)
  • - 1/4 cup plain yogurt (optional for extra softness)
  • - 1 tablespoon milk (optional for richness)


 Instructions:

1. *Activate the yeast:*- In a small bowl, combine the warm water, sugar, and yeast. Stir and let it sit for about 5-10 minutes until it becomes frothy and bubbly.


2. *Prepare the dough:* - In a large bowl, mix the flour and salt together.- Make a well in the center and add the activated yeast mixture, vegetable oil, yogurt, and milk (if using).  - Stir the mixture until it forms a rough dough.


3. *Knead the dough:*- Transfer the dough onto a lightly floured surface and knead it for about 8-10 minutes, or until the dough becomes smooth and elastic.- If the dough is too sticky, add small amounts of flour; if it’s too dry, add a little more warm water.


4. *First rise:*- Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.


5. *Shape the bread:* - Once the dough has risen, punch it down to remove excess air. Divide it into small portions (usually 4-6 pieces).- Roll each piece into a round or oval shape, about 1/2 inch thick. 


6. *Second rise:* - Place the shaped dough onto a lightly floured baking sheet or tray, cover, and let it rest for about 30 minutes to rise slightly.


7. *Cook the bread:*- Preheat your oven to 375°F (190°C). - If you prefer to cook them in a traditional way, you can use a flat pan or griddle. Heat the pan over medium heat, and cook each round of dough for about 3-4 minutes on each side, or until golden brown spots appear.- For oven baking, place the dough on a baking sheet and bake for about 15-20 minutes, until the bread is golden and slightly puffed.


8. *Serve:*- Once baked, you can brush the Khamir bread with a bit of butter for extra flavor and softness.- Serve warm with stews, dips, or any of your favorite dishes!
