Tharid is a traditional Saudi Arabian dish made with a base of bread soaked in meat broth, often served with lamb or chicken. It is rich in flavor and a comforting dish, often enjoyed during special occasions, especially in Ramadan.


Here’s how you can make Tharid

Ingredients:

  • - 500g lamb or chicken (cut into pieces)
  • - 4-5 tablespoons of ghee or vegetable oil
  • - 1 large onion, finely chopped
  • - 3-4 cloves of garlic, minced
  • - 2 tomatoes, chopped
  • - 1 large potato, peeled and cut into cubes (optional)
  • - 1-2 carrots, sliced (optional)
  • - 2 teaspoons ground cumin
  • - 1 teaspoon ground coriander
  • - 1 teaspoon ground cinnamon
  • - 1 teaspoon ground black pepper
  • - 1 teaspoon turmeric (optional)
  • - Salt to taste
  • - 5-6 cups water (or more, depending on the desired consistency)
  • - 4-5 flat bread pieces (preferably Arabic bread, torn into pieces)
  • - Fresh coriander leaves for garnish


 Instructions:

1. *Cook the meat:*- Heat the ghee or oil in a large pot over medium heat. Add the meat (lamb or chicken) and brown it on all sides for about 5-10 minutes.

   

2. *Add the aromatics:*- Add the chopped onion and garlic to the pot, cooking them until they become soft and translucent (about 5 minutes).

   

3. *Add the spices and vegetables:*- Add the chopped tomatoes, cumin, coriander, cinnamon, black pepper, turmeric, and salt. Stir everything well and cook for another 5 minutes until the tomatoes break down and the spices release their fragrance. - Add the potato and carrots (if using), and stir.


4. *Add water:* - Pour in the water, enough to cover the ingredients. Bring it to a boil, then lower the heat to a simmer. Let the stew cook for about 45 minutes to 1 hour, or until the meat is tender and the vegetables are cooked through.


5. *Prepare the bread:*- Tear the flatbread into pieces and add it to the pot. Stir the bread into the stew so it absorbs the broth and softens. Let the bread soak for about 10 minutes.


6. *Serve:*- Once the bread is soaked and the flavors are melded together, taste the broth and adjust the seasoning if needed. - Garnish with fresh coriander leaves.


Serving:

- Tharid is usually served hot, directly from the pot. It’s best enjoyed with a side of yogurt or a fresh salad.


This comforting dish is often enjoyed as a hearty meal, especially during the cooler months or festive occasions!
